  • 2 tablespoons tahini

  • 3 tablespoons olive oil
  • Salt and pepper, to taste

For the Peppers

  • 2 medium bell peppers, sliced (any color)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the chicken: Preheat your oven to 400°F (200°C). In a bowl, mix the turmeric, cumin, olive oil, salt, and pepper to form a paste. Rub this mixture evenly over the chicken pieces.
  2. Roast the chicken: Place the turmeric-coated chicken on a baking tray lined with foil or parchment paper. Roast in the oven for 30-35 minutes or until the chicken is cooked through and the skin is golden and crispy.
  3. Make the butter bean hummus: In a food processor, combine the butter beans, tahini, lemon juice, garlic, and olive oil. Blend until smooth and creamy. Season with salt and pepper to taste. Add a little water if the hummus is too thick.
  4. Prepare the peppers: While the chicken roasts, heat olive oil in a skillet over medium heat. Add the sliced peppers, seasoning with salt and pepper. Sauté for 5-7 minutes until tender but slightly crisp.
