For the Turmeric Chicken
- 4 chicken thighs or breasts, skin on
- 2 teaspoons ground turmeric
- 1 teaspoon ground cumin
- 2 tablespoons olive oil
- Salt and black pepper, to taste
For the Butter Bean Hummus
- 1 can (400g) butter beans, drained and rinsed
- 2 tablespoons tahini
- 2 tablespoons lemon juice
- 1 garlic clove, minced
- 3 tablespoons olive oil
- Salt and pepper, to taste
For the Peppers
- 2 medium bell peppers, sliced (any color)
- 1 tablespoon olive oil
- Salt and pepper, to taste
- Prepare the chicken: Preheat your oven to 400°F (200°C). In a bowl, mix the turmeric, cumin, olive oil, salt, and pepper to form a paste. Rub this mixture evenly over the chicken pieces.
- Roast the chicken: Place the turmeric-coated chicken on a baking tray lined with foil or parchment paper. Roast in the oven for 30-35 minutes or until the chicken is cooked through and the skin is golden and crispy.
- Make the butter bean hummus: In a food processor, combine the butter beans, tahini, lemon juice, garlic, and olive oil. Blend until smooth and creamy. Season with salt and pepper to taste. Add a little water if the hummus is too thick.
- Prepare the peppers: While the chicken roasts, heat olive oil in a skillet over medium heat. Add the sliced peppers, seasoning with salt and pepper. Sauté for 5-7 minutes until tender but slightly crisp.
- Assemble and serve: Plate the roasted turmeric chicken alongside a generous serving of butter bean hummus and sautéed peppers. Optionally garnish with fresh herbs or a drizzle of olive oil. Enjoy warm.
Notes
- You can substitute chicken thighs with breasts if preferred, adjusting cooking time accordingly.
- For a smoother hummus, peel the butter beans before blending.
- Roasted peppers can be used instead of sautéed for a sweeter flavor.
- Leftovers store well in the fridge for up to 3 days.
