Ingredients

Scale

Dry Ingredients

  • 2 ¼ cups all-purpose flour
  • 2 teaspoons espresso powder
  • ½ cup unsweetened cocoa powder, for dusting

Wet Ingredients

  • 1 cup mascarpone cheese, softened
  • ¾ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the Dough: In a mixing bowl, cream together the softened mascarpone cheese, unsalted butter, and granulated sugar until smooth and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  2. Combine Dry Ingredients: In a separate bowl, whisk together all-purpose flour and espresso powder until evenly distributed.
  3. Mix Dry and Wet Ingredients: Gradually add the dry mixture to the wet ingredients, mixing gently until the dough forms a cohesive ball. Avoid overmixing to maintain a tender texture.
  4. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 1 hour to firm up for easier handling and better texture.
  5. Shape and Bake: Preheat the oven to 350°F (175°C). Roll the dough into small balls and place them on a parchment-lined baking sheet, spacing them about 2 inches apart. Bake for 12-15 minutes or until the edges are lightly golden.
  6. Cool and Dust with Cocoa: Allow the cookies to cool completely on a wire rack. Once cooled, generously dust the tops with unsweetened cocoa powder to infuse the classic tiramisu flavor.

Notes

  • For a stronger coffee flavor, dissolve espresso powder in a teaspoon of hot water before adding to dry ingredients.
  • Ensure mascarpone is at room temperature to blend smoothly into the dough.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • Can be frozen after baking for up to 3 months; thaw at room temperature before serving.
