Meatballs
- 250 g ground pork (20% fat recommended for juiciness)
- 250 g ground beef
- 60 g breadcrumbs (fresh bread roll blended in a food processor)
- 1 egg
- 1 generous pinch flaky salt
- Ground black pepper, to taste
- 1 tbsp vegetable oil
Teriyaki Sauce
- 3 tbsp light soy sauce
- 3 garlic cloves, minced
- 1/2 inch ginger, minced
- 1/2 tbsp brown sugar
- 1 tbsp rice wine vinegar
Spicy Miso Sauce
- 1 tbsp butter
- 2 garlic cloves, minced
- 1/2 tbsp miso paste
- 300 ml single cream
- 1 tbsp sriracha (adjust to taste)
- 1 tsp light soy sauce
- 1/2 tsp brown sugar
To Serve
- 2 portions Thai jasmine rice, cooked and hot
- 10 g chives, finely sliced
- Black sesame seeds, for garnish
- 4 tsp chili oil (optional)
- Prepare the meatball mixture: In a large bowl, combine the ground pork, ground beef, breadcrumbs, egg, flaky salt, and ground black pepper. Mix thoroughly until all ingredients are incorporated. Shape the mixture into around 16 evenly sized meatballs to ensure they cook consistently.
- Fry the meatballs: Heat 1 tablespoon of vegetable oil in a large frying pan or skillet over medium heat. Once hot, carefully place the meatballs in the pan. Fry each side for about 3 minutes until they develop a golden-brown crust. The inside will still be raw at this stage.
- Make and add teriyaki sauce: In a separate bowl, mix together the soy sauce, minced garlic, minced ginger, brown sugar, and rice wine vinegar to form the teriyaki sauce. Pour this sauce over the meatballs in the pan, stirring gently to coat them well. Reduce the heat to low, cover with a lid, and cook for an additional 10 minutes, or until the meatballs are fully cooked through in the center.
- Prepare the spicy miso sauce: In a separate pan, melt the butter over medium heat. Add the minced garlic and miso paste, stirring until they combine into a smooth paste. Gradually stir in the single cream, sriracha, soy sauce, and brown sugar. Let the sauce simmer gently on low heat, stirring occasionally until ready to serve. Taste and adjust seasoning if needed.
- Assemble and serve: Divide the freshly cooked jasmine rice between serving bowls. Top each with the teriyaki meatballs and generously drizzle with the spicy miso sauce. Garnish with finely sliced chives, a sprinkle of black sesame seeds, and, if desired, a drizzle of chili oil for extra heat. Serve immediately and enjoy!
