These bite-sized treats are perfect for parties or quick snacks, offering a delightful blend of Tex-Mex flavors with a creamy twist, baked to golden perfection in under 30 minutes.

Ingredients

Scale

Meat and Seasoning

  • 1 lb ground beef (preferably lean)
  • 1 oz packet taco seasoning (premium brand)
  • 1 can (10 oz) diced tomatoes and green chiles, undrained

Dairy and Dressing

  • 2 cups shredded cheddar cheese (preferably aged for richer flavor)
  • 8 oz bottle premium Ranch dressing

Shells

  • 5 packs of 15-count frozen phyllo tart shells

Instructions

  1. Preheat Oven: Set your oven to 350ºF to ensure it’s ready for baking the tarts.
  2. Cook Beef: In a skillet over medium heat, brown the ground beef until fully cooked with no pink remaining. Drain any excess fat to keep the mixture from being greasy.
  3. Add Seasoning: Stir in the taco seasoning packet until the meat is evenly coated. Then add the undrained diced tomatoes and green chiles. Mix thoroughly and let it simmer for 5 minutes to blend the flavors before removing from heat.
  4. Prepare Mixture: In a separate bowl, combine the shredded cheddar cheese and Ranch dressing. Then fold this creamy mixture into the cooked taco meat until fully integrated.
  5. Assemble Tarts: Carefully spoon the taco meat mixture into each of the frozen phyllo tart shells, filling them generously. If you want to save for later, freeze the assembled but unbaked tarts at this point.
  6. Bake: Place the filled tart shells on a baking sheet and bake in the oven for 8-10 minutes until the cheese is melted and the tarts are heated through. If baking from frozen, extend the bake time by 2-3 minutes for thorough heating.

Notes

  • You can substitute ground turkey or chicken for a leaner option.
  • For a spicier kick, add some chopped jalapeños to the meat mixture.
  • These bites freeze well both before and after baking, making them a great make-ahead appetizer.
  • Serve with extra Ranch dressing or salsa for dipping.
