  • 270 g All-purpose flour (1¾ cups)
  • 2 tsp Baking powder
  • 1 pinch Salt

Filling

  • 250 ml Nutella or marmalade (1 cup)

Instructions

  1. Line muffin tins: Place cupcake liners into muffin tins to prepare for the batter.
  2. Preheat oven: Set your oven to 220°C (425°F) to preheat thoroughly.
  3. Whisk wet ingredients: In a bowl, whisk together room temperature butter, sunflower oil, sugar, and vanilla extract until the mixture becomes smooth and creamy.
  4. Add eggs: Incorporate one egg at a time into the wet mixture, whisking well after each addition until fully blended.
  5. Mix dry ingredients: Add the all-purpose flour, salt, and baking powder into the wet mixture. Stir carefully and thoroughly until just combined, avoiding overmixing to keep the muffins tender.
  6. Fill muffin tins: Spoon the batter into the cupcake liners, filling each about two-thirds full.
  7. Add filling: Place about one tablespoon of your chosen filling (Nutella or marmalade) in the center of each muffin batter mound.
  8. Swirl the filling: Using a bamboo skewer, gently swirl the filling into the batter with a circular motion to create a marbled effect.
