Sticky Rice
- 1 cup glutinous (sticky) rice
- 1 1/2 cups water
Coconut Sauce
- 1 cup coconut milk
- 1/3 cup sugar
- 1/4 teaspoon salt
Fruit
- 2 ripe fresh mangoes, peeled and sliced
- Prepare the Sticky Rice: Rinse the glutinous rice several times until the water runs clear. Soak the rice in water for at least 4 hours or overnight for best texture. Drain the soaked rice and cook it either by steaming or using a rice cooker with 1 1/2 cups water until the rice is tender and sticky, about 20-30 minutes.
- Make the Coconut Sauce: In a small saucepan, combine coconut milk, sugar, and salt. Heat the mixture over medium heat, stirring gently until the sugar dissolves completely. Do not boil; just warm it enough to meld the flavors.
- Combine Coconut Sauce with Rice: Once the sticky rice is cooked, transfer it to a bowl and pour about 3/4 of the warm coconut sauce over the rice. Mix gently and let it sit for 15-20 minutes to allow the rice to absorb the coconut flavors.
- Serve: Place a portion of the coconut-infused sticky rice on a serving plate. Arrange sliced fresh mango alongside the rice. Drizzle the remaining coconut sauce over the mango and rice for added richness. Enjoy immediately for best flavor and texture.
Notes
- For best results, use ripe, sweet mango varieties such as Ataulfo or Nam Dok Mai.
- Soaking the sticky rice overnight improves texture and shortens cooking time.
- You can garnish with toasted mung beans or sesame seeds for added crunch.
- This dessert is best served fresh but can be stored covered in the refrigerator for up to one day.
