  • 1 cup cornmeal

  • 1/2 cup unsalted butter, melted
  • 1 cup milk

Instructions

  1. Mix the Batter: In a large mixing bowl, combine the cornmeal and flour. In a separate bowl, whisk together the honey, melted butter, and milk until well blended. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix to keep the batter light.
  2. Scoop into Mini Molds: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin or cornbread popper mold. Using a spoon or small cookie scoop, evenly distribute the batter into the mini molds, filling each about three-quarters full.
  3. Bake until Golden: Place the mold in the preheated oven and bake for 12 to 15 minutes, or until the poppers are golden brown on top and a toothpick inserted into the center comes out clean. Remove from oven and let cool slightly before removing from molds.
