A hearty and satisfying Sunday Breakfast Casserole featuring layers of eggs, savory sausage, bread, and melted cheese. Perfect for a weekend brunch or family breakfast, this dish is easy to assemble and bakes into a warm, comforting meal.

Ingredients

Scale

Egg Mixture

  • 8 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Sausage

  • 1 pound breakfast sausage, cooked and crumbled

Bread

  • 6 cups cubed day-old bread (white or whole wheat)

Cheese

  • 2 cups shredded cheddar cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure even cooking of the casserole.
  2. Prepare Sausage: In a skillet over medium heat, cook the sausage until browned and fully cooked. Drain excess fat and set aside.
  3. Mix Eggs: In a large bowl, whisk together eggs, milk, salt, and pepper until fully combined.
  4. Layer Ingredients: In a greased 9×13 inch baking dish, spread half of the cubed bread evenly. Sprinkle half of the cooked sausage over the bread, then half of the shredded cheese. Repeat these layers with the remaining bread, sausage, and cheese.
  5. Pour Egg Mixture: Carefully pour the egg mixture evenly over the layered ingredients, pressing down lightly to help absorb the eggs into the bread.
  6. Bake: Bake in the preheated oven for 45 to 50 minutes, or until the casserole is set in the center and the top is golden brown.
  7. Cool and Serve: Allow the casserole to cool for about 5 minutes before slicing. Serve warm for a delicious breakfast or brunch.

Notes

  • Use day-old bread for better texture as fresh bread can become soggy.
  • Feel free to substitute cheddar cheese with your favorite cheese like Monterey Jack or mozzarella.
  • Optional: Add chopped vegetables like bell peppers or onions for extra flavor and nutrition.
  • For a make-ahead meal, assemble the casserole the night before, cover, and refrigerate; bake in the morning, adding an extra 10 minutes to the baking time.
  • Leftovers can be refrigerated for up to 3 days and reheated before serving.
