Instructions

  1. Prepare the Dates: Place the chopped dates in a bowl, pour boiling water over them, add the baking soda, and let them soak while you prepare the rest of the batter. This softens the dates and helps incorporate them smoothly into the cake.
  2. Make the Sponge Batter: In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time, ensuring each is fully incorporated.
  3. Combine Dry Ingredients: Sift together the flour and baking powder, then gradually add to the butter mixture, mixing to create a smooth batter. Stir in the soaked dates along with their liquid and vanilla extract until well combined.
