These delightful S’mores Bites are a fun, bite-sized twist on the classic campfire treat. Featuring a crunchy graham cracker crust, a gooey marshmallow center, and a rich milk chocolate topping, they are perfect for parties, snacks, or satisfying your sweet tooth with minimal effort. Baked to perfection and optionally broiled for a golden marshmallow finish, these mini treats bring campfire nostalgia right to your oven.

Crust

  • 7 whole graham crackers (equals 1 cup, finely crushed)
  • 1/4 cup (28g) powdered sugar
  • 6 Tbsp (86g) unsalted butter, melted

Filling & Topping

  • 2 milk chocolate candy bars (1.55 oz each), divided into rectangles
  • 12 large marshmallows, cut in half

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C) to prepare for baking the crust cups.
  2. Crush Graham Crackers: Finely crush the whole graham crackers using a food processor, slap chop, or by placing them in a sealed plastic bag and smashing them until you have about 1 cup of fine crumbs.
  3. Mix Crust Ingredients: In a small bowl, combine the graham cracker crumbs with powdered sugar and melted unsalted butter until well mixed.
  4. Form Crust Cups: Lightly grease a 24-cup mini muffin pan. Evenly divide the crumb mixture among the cups, pressing down firmly to form shallow crust cups.
  5. Bake Crust Cups: Place the muffin pan in the preheated oven and bake for 4-5 minutes, or until the edges of the crust are golden brown.
  6. Prepare Chocolate and Marshmallow: While the crust is baking, break the chocolate bars into individual rectangles as they are scored. Cut each marshmallow in half using scissors dipped in cold water to prevent sticking.
  7. Add Chocolate to Cups: Remove the muffin pan from the oven and place one piece of chocolate into each crust cup.
  8. Add Marshmallow Half: Place one marshmallow half, cut side down, on top of each chocolate rectangle inside the crust cups.
  9. Bake Again: Return the pan to the oven and bake for 2-4 minutes, just until the marshmallows are slightly softened and starting to puff.
  10. Optional Broil: If you prefer a toasted, golden-brown marshmallow top, set your oven to broil and broil the s’mores bites for 1-2 minutes carefully watching to prevent burning.
  11. Cool and Serve: Remove the pan from the oven and place it on a cooling rack. Let the s’mores bites cool for 15 minutes before carefully removing them from the pan and serving.

  • Use scissors soaked in cold water to cut marshmallows easily without sticking.
  • Watch carefully during the broil step to avoid burning the marshmallows as they brown quickly.
  • You can swap milk chocolate for dark or white chocolate based on preference.
