Puttanesca Fish Tray Bake is a vibrant and flavorful Mediterranean-inspired dish featuring flaky white fish baked with a zesty mixture of tomatoes, olives, and capers. This easy one-pan meal combines the bold, briny flavors of a classic puttanesca sauce for a quick and satisfying dinner.

Ingredients

Scale

Fish

  • 4 white fish fillets (such as cod, haddock, or sole), about 6 oz each

Vegetables & Sauce

  • 2 cups cherry tomatoes, halved
  • 1/2 cup pitted black olives, sliced
  • 2 tablespoons capers, rinsed
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for baking the fish.
  2. Prepare the puttanesca mixture: In a mixing bowl, combine cherry tomatoes, sliced olives, capers, minced garlic, olive oil, dried oregano, crushed red pepper flakes if using, and salt and pepper. Mix well to blend the flavors.
  3. Assemble the tray: Arrange the white fish fillets in a single layer in a large baking dish or tray. Spoon the puttanesca mixture evenly over the fish, spreading the tomatoes and olives around the fillets for even cooking and flavor infusion.
  4. Bake the fish: Place the tray in the preheated oven and bake for 15 to 20 minutes, or until the fish is opaque and flakes easily with a fork.
  5. Garnish and serve: Remove from the oven and sprinkle freshly chopped parsley over the top. Serve immediately with crusty bread or a side of your choice.

Notes

  • For best results, use fresh fish fillets that are of uniform thickness to ensure even cooking.
  • This dish pairs beautifully with crusty bread or a light salad for a complete meal.
  • You can adjust the spiciness with the amount of crushed red pepper flakes based on your preference.
  • Rinsing capers before use helps reduce excess saltiness.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
