Instructions

  1. Prepare the dry ingredients: In a large mixing bowl, whisk together the all-purpose flour and baking powder until well combined to ensure even leavening throughout the biscuits.
  2. Incorporate the butter: Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, carefully cut the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter remaining.
  3. Add the pumpkin puree: Pour in the pumpkin puree and gently mix it into the flour and butter mixture until just combined, forming a soft dough. Avoid overmixing to keep the biscuits tender.
  4. Shape the biscuits: Lightly flour a clean surface and turn the dough out onto it. Pat or roll the dough to about 1/2 to 3/4 inch thickness. Use a biscuit cutter or a glass to cut out rounds and place them on a baking sheet lined with parchment paper, spacing them about 1 inch apart.
