Instructions

  1. Cook the bacon: In a large pot or Dutch oven, cook the bacon over medium heat until crisp. Remove the bacon and set aside on paper towels to drain; reserve about 1-2 tablespoons of bacon fat in the pot.
  2. Sauté aromatics: Add chopped onion and minced garlic to the bacon fat in the pot. Sauté over medium heat until the onions are translucent and fragrant, about 3-4 minutes.
  3. Cook potatoes: Add the diced potatoes to the pot along with the chicken broth. Bring to a boil, then reduce heat to a simmer. Cook until the potatoes are tender, approximately 15-20 minutes.
  4. Add cream and cheese: Stir in the heavy cream and shredded cheddar cheese. Continue to simmer gently, stirring frequently, until the cheese is melted and the soup is heated through.
  5. Season and finish: Crumble the cooked bacon and add it back to the soup. Season with salt and pepper to taste. Stir well and cook for an additional 2-3 minutes to blend flavors.
