Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil

Vegetables

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 medium zucchini, sliced into half-moons
  • 1 medium red onion, cut into wedges
  • 1 cup cherry tomatoes

Balsamic Glaze

  • ½ cup balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • 2 cloves garlic, minced

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the chicken and vegetables evenly.
  2. Prepare Balsamic Glaze: In a small saucepan over medium heat, combine balsamic vinegar, honey, and minced garlic. Simmer gently until reduced by half and thickened into a glaze, about 8-10 minutes. Remove from heat and set aside.
  3. Season Chicken: Pat the chicken breasts dry, then drizzle with olive oil and season generously with salt and black pepper on both sides.
  4. Assemble in Pan: Arrange the seasoned chicken breasts in a single layer in a large baking dish or rimmed sheet pan. Surround the chicken with sliced bell peppers, zucchini, red onion, and cherry tomatoes.
  5. Glaze and Bake: Drizzle half of the balsamic glaze over the chicken and vegetables. Place the pan in the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the vegetables are tender.
  6. Finish and Serve: Remove from oven and drizzle the remaining balsamic glaze over the chicken and vegetables. Let rest for 5 minutes before serving for flavors to meld.

Notes

  • You can use other vegetables such as asparagus, broccoli, or carrots based on your preference.
  • For a thicker glaze, continue simmering the balsamic mixture slightly longer, but watch closely to prevent burning.
  • Make sure not to overcook the chicken to keep it juicy and tender.
  • Serve with a side of rice, quinoa, or crusty bread for a complete meal.
