Vegetables & Base

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced

Tzatziki Sauce

  • 1 cup plain Greek yogurt
  • 1/2 cup grated cucumber (seeded and drained)
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • 1 tbsp chopped fresh dill
  • Salt, to taste
  • Black pepper, to taste

Garnish

  • Fresh parsley or dill, chopped (optional)

Instructions

  1. Marinate the steak: In a mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Add the sirloin steak and fully coat it with the marinade. Cover and refrigerate for at least 30 minutes to allow the flavors to infuse.
  2. Prepare the tzatziki sauce: In another bowl, mix the Greek yogurt with grated cucumber (ensure excess moisture is squeezed out), lemon juice, minced garlic, chopped dill, salt, and black pepper. Refrigerate until ready to serve to develop the flavors.
  3. Cook the steak: Heat a skillet over medium-high heat. Remove steak from marinade and cook for 4 to 5 minutes on each side until your preferred doneness is reached. Once cooked, transfer the steak to a plate and let it rest for about 5 minutes before slicing thinly against the grain.
  4. Assemble the bowls: Begin by spooning cooked grains into serving bowls as the base. Arrange sliced steak on top, followed by fresh cherry tomatoes and diced cucumber. Drizzle generously with the prepared tzatziki sauce. Optionally, garnish with fresh parsley or dill.
