  • 4 red onion slices
  • 4 leaves of lettuce

  5. Step 5: Assemble the burgers by placing the falafel patties on the buns. Top each patty with feta cheese slices, tomato slices, red onion slices, and lettuce leaves. Serve immediately.

Tips & Variations

  • For extra crispiness, chill the falafel mixture for 30 minutes before shaping the patties.
  • Swap out the vegetable oil for olive oil for a richer flavor.
  • Add a dollop of hummus to the bun for extra creaminess.
  • Use whole wheat buns or pita bread for a healthier or traditional touch.
  • For a spicier kick, increase the crushed red pepper flakes or add some harissa to the yogurt sauce.

Storage

Store leftover falafel patties in an airtight container in the refrigerator for up to 3 days. Reheat them in a skillet over medium heat or in the oven at 350°F (175°C) until warmed through to keep them crispy. Keep the yogurt sauce refrigerated and give it a stir before serving again.

  • 4 red onion slices
  • 4 leaves of lettuce

Instructions

  1. Prepare the falafel mixture: In a food processor, combine chickpeas, onion, garlic, parsley, flour, cilantro, cumin, salt, crushed red pepper flakes, and black pepper. Pulse about 10 times until the ingredients are combined and the mixture starts to come together into a coarse paste.
  2. Shape the patties: Lay 5 sheets of paper towel on the counter. Transfer the falafel mixture onto the towels and gently press to squeeze out the excess liquid. Use additional towels if needed to remove more moisture. Then, shape the mixture into 4 even patties using your hands.
  3. Cook the patties: Heat the vegetable oil in a medium nonstick frying pan over medium-high heat. Add the falafel patties and cook for about 4 minutes on one side until golden brown. Flip and cook the other side for another 4 minutes until browned and cooked through. Remove the patties from the pan and set aside on a plate.
  4. Make the cucumber yogurt sauce: In a small bowl, combine Greek yogurt, minced garlic, shredded cucumber (with any excess water squeezed out), lemon juice, salt, and black pepper. Mix well to create a creamy, flavorful sauce.
  5. Assemble the burgers: Spread the yogurt cucumber sauce evenly on the tops and bottoms of the hamburger buns. Place one falafel patty on each bun bottom, then top with slices of feta cheese, tomato, red onion, and a leaf of lettuce. Cover with the bun top and serve immediately.

Notes

  • For extra crispiness, you can bake the falafel patties in the oven at 375°F for 15-20 minutes, flipping halfway through.
  • Make sure to squeeze out as much moisture as possible from the falafel mixture to help the patties hold together better while cooking.
  • This recipe is vegetarian but not vegan due to the use of Greek yogurt and feta cheese. Substitute with vegan alternatives for a vegan version.
  • Serve with a side of sweet potato fries or a fresh Greek salad for a complete meal.
