Instructions

  1. Prepare aromatics. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent and fragrant, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  2. Add cauliflower and spices. Add the chopped cauliflower florets to the pot. Sprinkle dried oregano and ground cumin over the vegetables, stirring to coat evenly and release flavors.
  3. Pour in broth and simmer. Pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce heat to low and cover. Let the soup simmer gently for 20–25 minutes, or until the cauliflower is very tender.
  4. Blend the soup. Remove the pot from heat. Using an immersion blender, blend the soup until smooth and creamy. Alternatively, transfer the soup in batches to a blender and puree until smooth, then return to the pot.
  5. Season and serve. Taste the soup and season with salt and freshly ground black pepper as needed. Reheat gently if necessary, then ladle into bowls and serve warm.
