This Mango Coconut Panna Cotta is a luscious, creamy dessert that combines the tropical flavors of coconut and mango with a smooth, silky texture. The panna cotta is made by gently heating coconut milk, heavy cream, and sugar, then setting it with gelatin. Once chilled, it is topped with fresh mango puree, creating a refreshing and elegant dessert perfect for any occasion.

Ingredients

Scale

Panna Cotta Base

  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 teaspoons gelatin powder
  • 1 teaspoon vanilla extract

Topping

  • 1/2 cup mango puree (fresh or store-bought)

Instructions

  1. Heat the Dairy Mixture: In a saucepan over medium heat, combine coconut milk, heavy cream, and sugar. Stir gently until the sugar is completely dissolved and the mixture is warm but not boiling.
  2. Bloom the Gelatin: In a small bowl, sprinkle the gelatin powder over 3 tablespoons of cold water and let it sit for 5 minutes until it softens and blooms.
  3. Add Gelatin to Mixture: Stir the bloomed gelatin into the warm coconut milk and cream mixture until fully dissolved. Remove the saucepan from heat and stir in the vanilla extract.
  4. Pour into Molds: Carefully pour the mixture into serving molds or ramekins. Allow them to cool slightly at room temperature before transferring to the refrigerator.
  5. Chill to Set: Refrigerate the panna cotta for at least 4 hours or until fully set and firm to the touch.
  6. Add Mango Topping and Serve: Before serving, spoon a layer of mango puree over each panna cotta. Serve chilled for a refreshing dessert.

Notes

  • For a dairy-free version, substitute heavy cream with additional coconut milk, but the texture may be slightly less creamy.
  • Ensure the gelatin does not boil as it can lose its setting properties.
  • Mango puree can be made by blending fresh ripe mangoes or purchased pre-made for convenience.
  • Allow the panna cotta to set fully in the fridge for best texture, usually 4 hours or overnight.
