Ingredients

Scale

For the Nachos:

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1 bag tortilla chips (about 1012 ounces)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a blend)
  • 1 can black beans, rinsed and drained (optional)
  • 1 jalapeño, sliced (optional)

For Toppings:

  • Sour cream
  • Guacamole
  • Sliced green onions
  • Chopped fresh cilantro
  • Diced tomatoes
  • Sliced olives (optional)

Instructions

  1. Prepare the Beef: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent and fragrant.
  2. Cook Ground Beef: Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula to ensure even cooking.
  3. Season: Stir in the taco seasoning packet, adding a little water as per the seasoning instructions. Cook for an additional 2-3 minutes until the seasoning is well combined and the beef is heated through.
  4. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for melting the cheese on the nachos.
  5. Assemble Nachos: On a large baking sheet or oven-safe dish, spread out the tortilla chips evenly. Distribute the cooked beef mixture over the chips, then sprinkle the black beans and jalapeño slices if using. Finally, top everything with the shredded cheese.
  6. Bake: Place the assembled nachos in the preheated oven and bake for 10-15 minutes, or until the cheese is fully melted and bubbly.
  7. Add Toppings: Remove the nachos from the oven and allow to cool slightly. Add dollops of sour cream, guacamole, diced tomatoes, sliced green onions, chopped cilantro, and sliced olives as desired.
  8. Serve and Enjoy: Serve immediately while warm and enjoy your loaded beef and cheese nachos.

Notes

  • For a vegetarian version, omit the ground beef and substitute with seasoned black beans or meat alternatives.
  • You can customize the cheese blend to your liking; Monterey Jack and cheddar provide a great melt and flavor.
  • Adjust the spiciness by controlling the amount of jalapeño or leaving it out entirely.
  • Leftover nachos can be refrigerated and reheated, although they may lose some crispness.
  • If preferred, fresh homemade taco seasoning can be used instead of a packet for better control over salt and spice levels.
