Ingredients

Scale

Pumpkin Cake

  • 1 box pumpkin cake mix (about 15.25 oz)
  • Water, as called for on cake mix package (approximately 1 cup)
  • Vegetable oil, as called for on cake mix package (approximately 1/3 cup)
  • Eggs, as called for on cake mix package (usually 3 large eggs)
  • 1 teaspoon pumpkin pie spice or mixed warm spices (cinnamon, nutmeg, cloves)

Cream Cheese Filling

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Prepare the Pumpkin Cake Batter: In a large bowl, combine the pumpkin cake mix with water, vegetable oil, eggs, and pumpkin pie spice. Mix thoroughly according to the package instructions until you achieve a smooth batter.
  2. Bake the Pumpkin Cakes: Preheat your oven to 350°F (175°C). Grease a standard cupcake or muffin tin. Pour the batter into the tin, filling each cup about halfway. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely on a wire rack.
  3. Make the Cream Cheese Filling: While the cakes are cooling, beat the softened cream cheese with sugar, vanilla extract, and cinnamon in a medium bowl until the mixture is smooth and creamy.
  4. Hollow the Cakes: Once cooled, use a small knife or a cupcake corer to carefully remove a small portion from the center of each pumpkin cake, creating a cavity for the filling.
  5. Fill the Cakes: Spoon or pipe the cream cheese mixture into the hollowed centers of each pumpkin cake until filled.
  6. Chill and Serve: Refrigerate the filled pumpkin delights for at least 30 minutes to allow the filling to set slightly before serving. Enjoy chilled or at room temperature.

Notes

  • You can substitute homemade pumpkin cake batter for the boxed mix for a more homemade taste.
  • Feel free to add chopped nuts or raisins to the cake batter for added texture.
  • The cream cheese filling can be made lighter by using reduced-fat cream cheese if desired.
  • Store leftover Pumpkin Delights in an airtight container in the refrigerator for up to 3 days.
  • For a festive touch, dust the tops with powdered sugar or drizzle with caramel sauce before serving.
