Ingredients

Scale

Gelatin Base

  • 1 package (3 oz) strawberry gelatin powder (like Jell-O)
  • 1 cup boiling water

Creamy Mixture

  • 1 cup cottage cheese
  • 1 cup nondairy dessert topping (such as Cool Whip), thawed

Fruit and Mix-ins

  • 1 can (8 oz) crushed pineapple, drained
  • 1 cup fresh strawberries, washed, dried, and sliced
  • Optional: 1 cup mini marshmallows or 1/2 cup chopped nuts (sliced almonds, walnuts, or pecans)

Instructions

  1. Dissolve Gelatin: In a large bowl, dissolve the strawberry gelatin powder in 1 cup boiling water. Stir gently and continuously until the gelatin is completely dissolved. Allow the mixture to cool to room temperature, then set aside.
  2. Blend Cottage Cheese: Place the cottage cheese in a blender or food processor and pulse until smooth and uniform, creating a creamy consistency without lumps.
  3. Combine Cottage Cheese and Gelatin: Using a bowl scraper, transfer the smooth cottage cheese to the bowl containing the cooled gelatin mixture. Stir gently to combine.
  4. Fold in Cool Whip: Gently fold the thawed Cool Whip into the gelatin and cottage cheese mixture until well incorporated, ensuring the mixture is light and fluffy.
  5. Add Pineapple and Strawberries: Stir in the drained crushed pineapple and sliced fresh strawberries carefully to distribute evenly without deflating the mixture.
  6. Incorporate Optional Ingredients: If desired, gently fold in either mini marshmallows or chopped nuts to add texture and extra flavor to the fluff.
  7. Chill: Transfer the mixture to a serving dish or individual cups. Refrigerate for at least 2 hours, or until the fluff is fully set and firm to the touch.
  8. Garnish and Serve: Before serving, garnish with additional sliced strawberries, a dollop of Cool Whip, and/or a sprinkle of nuts or mini marshmallows as preferred to enhance presentation and taste.

Notes

  • This dessert is best served chilled and can be made a day ahead to enhance the flavors.
  • Use nondairy Cool Whip to keep the recipe lactose-free.
  • For a less sweet version, reduce the gelatin or add additional fresh fruit.
  • Mini marshmallows or nuts add contrasting textures; choose according to preference.
  • Ensure the gelatin mixture is cooled to room temperature before combining with cottage cheese to prevent curdling.
