Cheese Shells
- 1 Cup Shredded Cheddar Cheese
- 1 Cup Shredded Mozzarella Cheese
- 1/2 Cup Grated Parmesan Cheese
Beef Filling
- 1/2 lb Ground Beef
- 1/4 Cup Minced Onion
- 1/2 Tsp Chili Powder
- 1/2 Tsp Paprika
- 1 Tsp Cumin
- 1/2 Tsp Onion Powder
- 1/2 Tsp Garlic Powder
- 1/2 Tsp Salt
- Freshly ground black pepper to taste
- 2 Tbsp Water
- Prepare the Beef Filling: Brown the ground beef in a skillet over medium heat along with the minced onion until the beef is fully cooked and the onion is softened. In a small cup, mix together the cumin, chili powder, onion powder, garlic powder, salt, and pepper with 2 tablespoons of water. Pour this spice mixture over the browned beef and stir well. Let the mixture simmer for 5 to 10 minutes until all the liquid evaporates and the flavors concentrate.
- Make Cheese Shells: Preheat your oven to 400°F (200°C). In a large mixing bowl, combine the shredded cheddar, mozzarella, and grated parmesan cheeses thoroughly. Divide this cheese mixture into 6 equal portions and roll each into a ball. Place each cheese ball onto a baking sheet lined with parchment paper (do not use wax paper) and bake for 6 to 8 minutes, or until the edges are golden brown and crispy.
- Form Taquitos: Allow the cheese shells to cool for 1 to 2 minutes until they are firm enough to handle but still pliable. Flip each shell upside down on the parchment paper. Quickly spoon a few spoonfuls of the beef filling onto the edge of each cheese shell, then tightly roll the shell over the filling into a cigar shape. Work swiftly to roll them before the cheese hardens completely.
