Ingredients

Scale

For the Casserole:

  • 3 cups cooked chicken (shredded)
  • 1 cup cream cheese (softened)
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup diced jalapeños (fresh or pickled)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper (to taste)

For the Topping:

  • 1 cup crushed tortilla chips
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sliced jalapeños (for garnish, optional)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure an even cooking temperature for the casserole.
  2. Prepare the Casserole Mixture: In a large mixing bowl, combine the shredded chicken, softened cream cheese, sour cream, shredded cheddar and mozzarella cheeses, diced jalapeños, garlic powder, onion powder, paprika, salt, and pepper. Mix thoroughly until all ingredients are well incorporated into a creamy mixture.
  3. Assemble the Casserole: Grease a 9×13-inch baking dish, then pour the prepared chicken mixture into it. Spread it out evenly to create a uniform layer.
  4. Add Topping: Evenly sprinkle the crushed tortilla chips over the top of the chicken mixture. Follow by sprinkling the additional shredded cheddar cheese for extra cheesy goodness and a crispy topping.
  5. Bake the Casserole: Place the baking dish in the preheated oven and bake for 30-35 minutes. Bake until the casserole is bubbly and the cheese on top is melted with a golden-brown finish.
  6. Serve: Optionally garnish with sliced jalapeños for a pop of color and additional heat. Serve the casserole warm for a comforting, flavorful meal.

Notes

  • You can use cooked rotisserie chicken or leftover chicken to save time.
  • Adjust the amount of jalapeños to your preferred spice level.
  • If you prefer a crispier topping, broil the casserole for an additional 1-2 minutes at the end of baking, watching carefully to prevent burning.
  • For a lower-fat version, use reduced-fat cream cheese and cheeses.
  • This casserole can be prepared ahead of time and refrigerated before baking; just increase baking time slightly if baking from cold.
