Ingredients

Scale

Beef and Seasoning

  • 2 ¼ lb beef rump roast (2 ¼3 pounds)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp granulated garlic

Vegetables

  • 1 lb petite baby gold potatoes (whole unless large; halve or quarter)
  • 1 lb baby carrots
  • 1 cup yellow onion, sliced (about one small onion)
  • 8 oz mushrooms, sliced

Liquids and Flavorings

  • 1 cup Jack Daniels whiskey
  • 2 packets beefy onion Lipton soup mix
  • 22.6 oz cream of mushroom soup (or two 10.5 oz cans, regular, low sodium, or no sodium)

Instructions

  1. Season the Roast: Season the beef rump roast on all sides evenly with salt, black pepper, and granulated garlic. Place it in the center of your crock pot to prepare for slow cooking.
  2. Add Potatoes and Carrots: Arrange the baby gold potatoes and baby carrots around the roast, placing them at the bottom of the crock pot to cook alongside the meat.
  3. Add Onions and Mushrooms: Layer the sliced yellow onions and mushrooms over and around the roast and vegetables for added flavor.
  4. Pour in Whiskey: Carefully pour the full cup of Jack Daniels whiskey over the roast and vegetables to infuse the dish with a distinctive, smoky sweetness.
  5. Sprinkle Soup Mix: Evenly sprinkle both packets of beefy onion Lipton soup mix over all the ingredients in the crock pot for depth of flavor.
  6. Add Cream of Mushroom: Spoon the cream of mushroom soup as evenly as possible over the entire dish to create a creamy and rich sauce during cooking.
  7. Slow Cook: Cover with the lid and cook on LOW for 8 to 9 hours or on HIGH for 5 to 6 hours, allowing the meat to become tender and vegetables to soften.
  8. Rest the Meat: When done, carefully remove the roast and let it rest for a few minutes before shredding or slicing to retain juiciness.
  9. Remove Vegetables: Use a slotted spoon to transfer the cooked vegetables to a separate bowl, trying to leave behind as much liquid as possible.
  10. Make Gravy: Whisk the remaining sauce in the crock pot to blend all ingredients fully, forming a smooth, flavorful gravy.
  11. Serve: Return the roast and vegetables to the crock pot to keep warm or arrange them on a serving platter. Serve the gravy on the side in a gravy boat for pouring at the table.

Notes

  • If you prefer a thicker gravy, you can simmer the sauce on the stove for a few minutes and add a cornstarch slurry (mix of cornstarch and water) to thicken.
  • For a lower sodium version, opt for low or no sodium cream of mushroom soup and seasoning mixes.
  • The size of the roast can be adjusted based on your crock pot size; cooking times may vary slightly.
  • Leftovers store well in the refrigerator for up to 3 days and can be reheated gently on the stovetop or in a microwave.
  • Adding fresh herbs like thyme or rosemary at the start can enhance the flavor profile.
