Ingredients

Scale

Meatballs

  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Cassoulet Base

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (14 oz) can crushed tomatoes
  • 2 cups cooked white beans (such as cannellini or Great Northern beans)
  • 1 cup chicken broth
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste

Instructions

  1. Prepare the Meatballs: In a large bowl, combine ground chicken, breadcrumbs, Parmesan, egg, minced garlic, dried thyme, salt, and pepper. Mix well until all ingredients are evenly incorporated. Form the mixture into 1-inch meatballs and set aside.
  2. Sauté Aromatics: Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add diced onion and minced garlic, cooking until softened and fragrant, about 3-4 minutes.
  3. Add Tomatoes and Beans: Stir in crushed tomatoes, cooked white beans, chicken broth, and dried rosemary. Season with salt and pepper to taste. Bring the mixture to a gentle simmer.
  4. Simmer Meatballs: Carefully place the chicken meatballs into the tomato and bean mixture. Cover the skillet and let everything simmer gently on low heat for about 20-25 minutes, until the meatballs are cooked through and the sauce has thickened.
  5. Finish and Serve: Remove the lid and cook uncovered for another 5 minutes if needed to thicken the sauce. Adjust seasoning as necessary. Serve the cassoulet hot, garnished with fresh herbs if desired.

Notes

  • You can use dried beans soaked overnight as a substitute for canned beans.
  • For extra richness, add a splash of white wine to the base when sautéing onions.
  • This dish can be prepared a day ahead as flavors deepen overnight.
  • Serve with crusty bread or over creamy mashed potatoes for a complete meal.
