Ingredients

Scale

Pizza Base

  • 1 pre-made pizza crust (store-bought or homemade)

Vegetables and Aromatics

  • 1 cup fresh spinach, chopped
  • 1 medium head garlic

Cheeses

  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup feta cheese, crumbled
  • ¼ cup grated Parmesan cheese

Oils and Seasonings

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes
  • Salt and pepper to taste

Garnish

  • Fresh basil leaves

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with 1 tablespoon of olive oil, then wrap it tightly in aluminum foil. Roast in the oven for 30-35 minutes until the garlic is soft and caramelized. Allow to cool slightly, then squeeze the roasted garlic cloves out of their skins into a bowl.
  2. Sauté Spinach: Heat the remaining 1 tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Season with salt and pepper to taste. Remove from heat and set aside.
  3. Prepare the Cheese Mixture: Mash the roasted garlic in the bowl until smooth. Add ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper. Mix thoroughly to combine all flavors evenly.
  4. Assemble the Pizza: Spread the garlic-ricotta mixture evenly over the pizza crust. Distribute the sautéed spinach evenly on top, then sprinkle the rest of the mozzarella cheese and crumbled feta cheese over it. If desired, add crushed red pepper flakes for a touch of heat.
  5. Bake the Pizza: Place the assembled pizza in the preheated oven and bake for 15-20 minutes, until the crust turns golden brown and the cheeses are bubbly with light browning.
  6. Garnish and Serve: Once baked, allow the pizza to cool for a couple of minutes. Garnish with fresh basil leaves to add a bright, aromatic finish before slicing and serving.

Notes

  • Using a pre-made pizza crust saves time, but feel free to use homemade dough for a fresher taste.
  • Roasting the whole garlic head mellows the garlic flavor and adds a sweet, caramelized depth.
  • Adjust the amount of crushed red pepper flakes based on your preferred spice level.
  • For a crispier crust, bake the pizza directly on a preheated pizza stone or baking steel.
  • This pizza is best enjoyed fresh but can be refrigerated and reheated the next day.
