Ingredients

Scale

Mix

  • 8 cups Chex cereal (rice, corn, or wheat)

Glaze

  • 1/2 cup (1 stick) unsalted butter
  • 1/2 cup molasses
  • 1/2 cup packed brown sugar
  • 2 teaspoons gingerbread spice (blend of ground ginger, cinnamon, cloves, nutmeg, and allspice)

Instructions

  1. Preheat oven: Preheat your oven to 250°F (120°C) to prepare for slow baking the coated cereal.
  2. Melt the glaze: In a medium saucepan, melt the butter over medium heat. Stir in molasses, brown sugar, and gingerbread spice until the mixture is smooth and well combined.
  3. Combine with cereal: Place the Chex cereal in a large mixing bowl. Pour the warm gingerbread glaze over the cereal and gently stir with a spatula to coat all the pieces evenly.
  4. Bake the mix: Spread the coated cereal mixture evenly onto a large baking sheet lined with parchment paper or a silicone baking mat. Bake in the preheated oven for about 45 minutes, stirring every 15 minutes to ensure even crisping and to prevent burning.
  5. Cool and serve: Once crisp and golden, remove the baking sheet from the oven and allow the Gingerbread Chex Mix to cool completely on the sheet. The mix will harden as it cools, becoming crunchy and delicious.

Notes

  • For best results, stir the cereal every 15 minutes while baking to prevent clumping and ensure even coating.
  • You can customize the gingerbread spice blend to your preference by adjusting the quantity of cinnamon or cloves.
  • Store the cooled mix in an airtight container at room temperature to maintain its freshness for up to two weeks.
  • If you prefer a sweeter mix, add an extra 2 tablespoons of brown sugar to the glaze.
