This simple yet delicious one-pan recipe is perfect for a hearty family meal and combines the rich taste of Parmesan with the aromatic touch of garlic, enhanced by olive oil for a perfect bake in the oven.

Ingredients

Scale

Chicken

  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds)

Potatoes

  • 1.5 pounds small red or baby potatoes, halved

Seasonings & Others

  • 4 cloves garlic, minced
  • 1/3 cup grated Parmesan cheese
  • 3 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried Italian herbs or parsley (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C) to ensure it is hot enough to crisp up the chicken skin and cook the potatoes evenly.
  2. Prepare the chicken and potatoes: Pat the chicken thighs dry with paper towels to help achieve crispy skin. In a large bowl, toss the halved potatoes with olive oil, minced garlic, salt, pepper, and Italian herbs until evenly coated.
  3. Season the chicken: Rub the chicken thighs with olive oil and season both sides generously with salt, pepper, minced garlic, and half of the Parmesan cheese.
  4. Assemble in a baking dish: Arrange the chicken thighs skin-side up in a large baking dish or sheet. Surround the chicken with the prepared potatoes, spreading them out in a single layer to ensure even roasting.
  5. Bake: Place the baking dish in the preheated oven and bake for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are tender. Halfway through baking, sprinkle the remaining Parmesan cheese over the potatoes and chicken for a golden crust.
  6. Rest and serve: Remove from the oven and let the dish rest for 5 minutes before serving. This allows the juices in the chicken to redistribute, keeping it moist and flavorful.

Notes

  • Use bone-in, skin-on chicken thighs for juicier, more flavorful meat and crispy skin.
  • You can substitute baby potatoes with Yukon gold or fingerling potatoes if desired.
  • Adjust garlic quantity to your preference for a milder or stronger garlic flavor.
  • For extra crispiness, broil the dish for the last 2-3 minutes, watching carefully to prevent burning.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven for best texture.
