Pasta
- 12 ounces angel hair pasta
Sauce
- 4 tablespoons dairy free butter
- 8–10 cloves garlic, minced
- 2 tablespoons low sodium soy sauce
- 1 tablespoon vegetarian oyster sauce (optional)
- 1 teaspoon toasted sesame oil
- 2 tablespoons brown sugar
- 3 green onions, sliced
- Cook the pasta: Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to the package instructions until al dente. Drain the pasta, reserving about a cup of the cooking water for later use, and set the pasta aside.
- Make the garlic sauce: In a large skillet over medium heat, melt the dairy free butter. Add the minced garlic and sauté for 2-3 minutes, until fragrant but not browned. Add the low sodium soy sauce, vegetarian oyster sauce, toasted sesame oil, brown sugar, and sliced green onions. Stir well to combine all ingredients and create a flavorful sauce.
- Toss pasta with sauce: Remove the skillet from heat and immediately add the drained angel hair pasta. Toss the pasta thoroughly to coat it evenly with the garlic sauce. If the sauce seems too thick or sticky, gradually add some of the reserved pasta cooking water a little at a time until the desired consistency is reached.
- Serve: Serve the garlic noodles immediately while warm, garnished with extra green onions or sesame seeds if desired.
Notes
- Angel hair pasta cooks quickly, so watch carefully to avoid overcooking.
- If vegetarian oyster sauce is not available, it can be omitted or replaced with a mushroom-based sauce for similar flavor.
- Use dairy free butter to keep the dish vegan and dairy free.
- Leftover noodles can be refrigerated and gently reheated with a splash of water or broth to loosen the sauce.
- For extra protein, add tofu, tempeh, or cooked shrimp to the skillet along with the sauce.
