Ingredients

Scale

Cookie Base

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

Frosting

  • 1 cup marshmallow fluff or marshmallow creme
  • 1/4 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Topping

  • 4 ounces semi-sweet chocolate, melted

Instructions

  1. Prepare the Cookie Dough: In a medium bowl, combine graham cracker crumbs, flour, baking soda, and salt. In a separate large bowl, beat softened butter with granulated and brown sugars until light and fluffy. Add egg and vanilla extract, mixing well. Gradually add dry ingredients to wet ingredients and mix until just combined.
  2. Bake the Cookies: Preheat the oven to 350°F (175°C). Scoop dough onto a baking sheet lined with parchment paper, spacing cookies about 2 inches apart. Flatten slightly with the back of a spoon. Bake for 10-12 minutes or until edges are golden. Remove from oven and allow to cool completely on a wire rack.
  3. Make the Marshmallow Frosting: Beat marshmallow fluff, softened butter, powdered sugar, and vanilla extract together until smooth and creamy.
  4. Frost the Cookies: Spread a generous layer of marshmallow frosting on each cooled cookie.
  5. Top with Chocolate: Drizzle or spread melted semi-sweet chocolate over the frosting layer on each cookie. Allow the chocolate to set at room temperature or in the refrigerator.
  6. Serve: Once the chocolate topping is firm, serve the Frosted S’mores Cookies at room temperature. Enjoy the gooey, chocolatey, and crunchy treat!

Notes

  • For best results, use fresh graham crackers for the crumbs.
  • You can substitute marshmallow fluff with homemade marshmallow creme if preferred.
  • Allow cookies to cool fully before frosting to prevent the frosting from melting.
  • Store cookies in an airtight container at room temperature for up to 3 days.
  • Chocolate can be melted using a microwave in short bursts or a double boiler to avoid burning.
