Paratha Dough

  • 2 cups all-purpose flour

  • 2 tbsp melted ghee

Chicken Smash Patties

  • 300 g ground chicken
  • 1 small onion, finely chopped
  • 0.5 tsp chilli powder
  • 1 green chilli, chopped
  • 0.5 tsp fennel seed powder
  • 0.25 tsp garam masala powder
  • 2 tbsp chopped coriander leaves
  • 1 egg
  • 0.25 cup bread crumbs
  • salt and pepper to taste
  • 4 slices cheddar cheese
  • 2 tbsp butter or oil for cooking

Toppings & Sauce

  • 0.5 onion, thinly sliced (for crispy/caramelized onions)
  • capsicum slices (optional)
  • your favorite burger sauces
  • 4 tbsp mayonnaise
  • 2 tbsp ketchup
  • 1 tsp chili garlic sauce
  • 0.5 tsp oregano seasoning
  • 0.5 tsp smoked paprika
  • dash lemon juice

Instructions

  1. Make the Paratha Dough: In a mixing bowl, combine the all-purpose flour and salt. Gradually add lukewarm water and mix until a dough forms. Knead the dough for about 8 to 10 minutes until smooth and elastic. Coat it with melted ghee, cover with a damp cloth, and let it rest for 30 minutes to relax the gluten and improve texture.
  2. Shape and Roll the Paratha: Divide the rested dough into equal-sized balls. Roll each ball into a thin circle using a rolling pin, dusting with extra flour as needed to prevent sticking. Apply a thin layer of ghee over the surface. Using a pizza cutter, cut the dough into thin strips. Fold these strips into a roll, then gently stretch and coil it. Flatten again gently into a paratha shape to create flaky layers.
  3. Cook the Paratha: Heat a tawa or non-stick skillet over medium-high heat. Cook each paratha for 2 to 3 minutes on each side until golden brown and flaky, brushing with ghee during cooking for a rich, buttery crust. Set cooked parathas aside and keep warm.
  4. Prepare the Smash Burger Patties: In a bowl, combine the ground chicken, finely chopped onion, chilli powder, pepper, fennel seed powder, chopped green chilli, garam masala powder, chopped coriander, egg, bread crumbs, and salt. Mix well and divide into equal-sized balls.
  5. Cook the Smash Patties: Heat a cast-iron skillet or heavy pan until very hot. Add butter or oil, then place one meatball onto the pan. Smash it flat immediately using a spatula or burger press. Let it sear for 1.5 to 2 minutes undisturbed to develop a crust. Flip and cook the other side until done. Place a slice of cheddar cheese on top and let it melt for an additional minute. Repeat with remaining patties.
  6. Make the Spicy Sauce: In a small bowl, combine mayonnaise, ketchup, chili garlic sauce, oregano seasoning, smoked paprika, and a dash of lemon juice. Mix thoroughly to create a flavorful spicy mayo sauce.
  7. Assemble the Dubai Smash Paratha Burger: Place one cooked paratha on your serving plate as the base. Spread a generous layer of spicy mayo sauce over it. Add one cheesy smash patty on top, followed by the crispy or caramelized onion slices, capsicum, and pickled vegetables if desired. Spread another layer of sauce on a second paratha and close the burger. Optionally, toast the whole assembled burger in a panini press or dry pan for 1 to 2 minutes to achieve a crispy finish.
