Instructions

  1. Soak and Blend Dates: Place the chopped dates in a bowl and pour over the boiling water. Stir in the baking soda and let the mixture soak for 10 minutes until softened. Then, blend or mash the dates into a thick paste.
  2. Make the Batter: In a separate bowl, cream together the softened butter and brown sugar until light and fluffy. Beat in the eggs one at a time. Fold in the self-raising flour gently, then stir in the blended date mixture until fully combined into a smooth batter.
  3. Bake the Pudding: Preheat the oven to 180°C (350°F). Pour the batter into a greased baking dish or individual ramekins. Bake for 30-35 minutes, or until a skewer inserted into the center comes out clean and the pudding is golden brown.
  4. Prepare the Toffee Sauce: While the pudding bakes, melt the butter in a saucepan over medium heat. Add the brown sugar and stir until dissolved. Slowly pour in the cream and simmer gently, stirring constantly until the sauce is smooth and thickened, about 5 minutes.
  5. Serve: Remove the pudding from the oven and while still warm, pour the toffee sauce generously over the top. Serve immediately, optionally accompanied by extra cream or vanilla ice cream.
