Main Ingredients
- 2 pounds boneless, skinless chicken breasts
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 large onion, sliced
- 8 ounces provolone cheese, sliced
- 4 hoagie rolls or sub rolls
- Salt and pepper, to taste
- 1 tablespoon olive oil
- Prepare the vegetables: Slice the green and red bell peppers and onion into thin strips and set aside.
- Cook the vegetables: In a skillet over medium heat, heat olive oil. Add the sliced peppers and onions and sauté until soft and slightly caramelized, about 7-10 minutes. Season with salt and pepper to taste. Remove from heat.
- Place chicken in Crockpot: Put the chicken breasts in the bottom of your slow cooker. Season with salt and pepper.
- Add sautéed vegetables: Spread the cooked peppers and onions evenly over the chicken breasts in the Crockpot.
- Slow cook: Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
- Shred chicken: Remove the chicken breasts from the slow cooker and shred them using two forks. Return the shredded chicken to the slow cooker and stir to combine with the vegetables and juices.
- Add cheese: Layer the slices of provolone cheese over the top of the chicken mixture. Cover and let sit for about 5 minutes to melt the cheese.
- Serve: Split the hoagie rolls and fill them generously with the cheesy chicken and vegetable mixture. Serve warm for a delicious, comforting meal.
Notes
- You can substitute chicken thighs for a juicier result.
- For extra flavor, add garlic powder or Worcestershire sauce to the slow cooker.
- To make it spicier, include sliced jalapeños with the peppers.
- Use any meltable cheese you prefer, such as mozzarella or American cheese as an alternative to provolone.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
