Instructions

  1. Prepare the frying station: Fill a large, heavy-bottomed pot halfway to two-thirds full with your preferred frying oil. Line a baking sheet with layers of paper towels to drain the chips after frying.
  2. Heat the oil: Heat the oil to 360°F using an oil or candy thermometer to monitor. Adjust the flame to maintain a consistent temperature between 350-360°F throughout frying.
  3. Cut the wonton wrappers: Slice each wonton wrapper into triangles. Keep the unused cut wrappers covered with a clean kitchen towel to prevent drying out between batches.
  4. Fry the wonton chips: Carefully add 6-7 triangles at a time to the hot oil (or more if the pot size allows). Fry them for 60-90 seconds until they puff up and turn a deep golden brown. Use a spider or slotted spoon to separate the chips while frying. Avoid overcrowding the pot to prevent the oil temperature from dropping, which would make the chips greasy.
  5. Drain and cool: Remove the golden brown chips from the oil using a spider or slotted spoon and place them onto the prepared paper towel-lined baking sheet. Let them cool completely before serving or storing.
