These Taco Egg Rolls are a delicious and crispy twist on traditional tacos, combining seasoned ground beef, melted cheese, and crunchy egg roll wrappers. Perfect as a snack or appetizer, they are quick to prepare and air-fried to golden perfection.

Ingredients

Scale

Filling

  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend)

Wrapper

  • 12 egg roll wrappers

Instructions

  1. Prepare the filling: In a skillet over medium heat, cook the ground beef until browned and cooked through, about 6-8 minutes. Drain excess fat. Stir in taco seasoning and a splash of water, simmer for 2-3 minutes until the seasoning is well incorporated.
  2. Assemble the egg rolls: Lay an egg roll wrapper on a clean surface. Place about 2 tablespoons of the beef mixture in the center, then sprinkle some shredded cheese on top. Roll up tightly, folding in the sides to seal the filling inside.
  3. Air fry the egg rolls: Preheat your air fryer to 380°F (193°C). Place the egg rolls in the air fryer basket in a single layer, making sure they do not touch. Air fry for 8-10 minutes or until golden brown and crispy, turning halfway through for even cooking.
  4. Serve: Remove the taco egg rolls from the air fryer and let cool slightly before serving with your favorite dips like salsa, guacamole, or sour cream.

Notes

  • Ensure the egg roll wrappers are sealed properly to prevent filling from leaking during cooking.
  • You can add extra ingredients like diced onions, jalapeños, or beans to the filling for more flavor.
  • If you don’t have an air fryer, these can also be baked at 400°F (204°C) for 15-20 minutes or until crispy.
  • Use a brush or spray a light coating of oil on the egg rolls before air frying to enhance crispiness.
