Instructions

  1. Prepare the Mushrooms: Clean the button mushrooms thoroughly and lightly sprinkle them with salt. Set them aside while you prepare the breading station to draw out excess moisture.
  2. Set Up Breading Station: Use three separate containers or mixing bowls. In the first, combine the flour, dried oregano, garlic powder, cayenne pepper, black pepper, salt, red chili flakes, dried basil, and dried thyme. In the second container, whisk together the eggs and milk until well combined. In the third container, place the seasoned bread crumbs, optionally seasoning them further with additional salt, pepper, garlic powder, and red chili flakes to enhance flavor.
  3. Coat the Mushrooms: Working with a manageable number of mushrooms, place them into the flour mixture container. Cover with the lid and shake vigorously to ensure they are evenly coated. Transfer the floured mushrooms to the egg wash container, cover, and shake again to coat thoroughly. Finally, move the mushrooms to the breadcrumb container, cover, and shake to completely coat each mushroom with the bread crumbs. Arrange the coated mushrooms on a clean plate and repeat this process with the remaining mushrooms.
  4. Deep-Fry the Mushrooms: Pour 1 to 2 inches of vegetable oil into a deep pan and heat it to 350°F (175°C), using a candy thermometer to maintain accurate temperature. Fry the mushrooms in small batches, around 6 at a time, for 6 to 10 minutes. Flip them halfway through cooking to achieve an even golden brown crust. Allow the oil temperature to return to 350°F between batches to ensure consistent frying.
  5. Drain and Serve: Once fried, remove the mushrooms with a slotted spoon and place them onto a paper towel-lined plate to remove excess oil. Serve the crispy fried mushrooms hot with ranch dressing or your favorite dipping sauce for dipping and enjoying.
