Instructions

  1. Prepare the onion: Peel the onion and stud it with the cloves to infuse flavor during cooking.
  2. Simmer the bread in milk: In a saucepan, combine the torn bread pieces, whole milk, butter, and the studded onion. Gently bring the mixture to a simmer over low heat, stirring frequently to prevent sticking. Let it simmer gently for about 10 minutes until the bread is very soft and has soaked up the milk and butter.
  3. Remove the onion: Take out the onion studded with cloves from the saucepan and discard.
  4. Blend the sauce: Transfer the bread and milk mixture to a blender or use an immersion blender directly in the pan. Blend until completely smooth, creating a creamy sauce. If the sauce is too thick, add a little more warm milk to reach desired consistency.
  5. Season to taste: Return the sauce to the saucepan and gently warm through. Season with salt and freshly ground white pepper to taste. Serve warm alongside roasted poultry or other meats.
