Steak
- 1 lb flank steak
- 2 cloves garlic, minced
- 1 tbsp butter
- Salt and pepper, to taste
Creamy Orzo
- 1 cup orzo pasta
- 2 cups water or chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp butter
- Salt and pepper, to taste
- Prepare the Steak: Season the flank steak generously with salt and pepper. Heat a skillet over medium-high heat and add 1 tbsp of butter. Once melted and hot, add minced garlic and cook briefly until fragrant.
- Sear the Steak: Place the steak in the hot skillet and sear for 4-5 minutes on each side until browned on the outside and cooked to your preferred doneness. Remove from heat and let it rest for 5 minutes to retain juices.
- Cook the Orzo: In a separate pot, bring 2 cups of water or chicken broth to a boil. Add orzo and cook according to package instructions, usually about 8-10 minutes, until tender. Drain any excess liquid.
- Make the Creamy Sauce: Return the cooked orzo to the pot over low heat. Stir in 1/2 cup heavy cream, 1 tbsp butter, and 1/2 cup grated Parmesan cheese. Mix well until creamy and heated through. Season with salt and pepper to taste.
- Slice the Steak: Thinly slice the rested flank steak against the grain to ensure tenderness.
- Serve: Plate the creamy orzo and top with sliced flank steak. Optionally garnish with additional Parmesan or fresh herbs.
Notes
- Letting the steak rest after searing helps keep it juicy.
- Using chicken broth instead of water adds more flavor to the orzo.
- You can add a pinch of crushed red pepper in the orzo for a bit of heat.
- If preferred, replace heavy cream with half-and-half for a lighter dish.
- Be sure to slice the steak against the grain for maximum tenderness.
