4.9 from 72 reviews

A delicious and hearty dish featuring tender, seared flank steak served over a creamy Parmesan orzo, enhanced with garlic and butter for rich flavor and comfort.

Ingredients

Scale

Steak

  • 1 lb flank steak
  • 2 cloves garlic, minced
  • 1 tbsp butter
  • Salt and pepper, to taste

Creamy Orzo

  • 1 cup orzo pasta
  • 2 cups water or chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp butter
  • Salt and pepper, to taste

Instructions

  1. Prepare the Steak: Season the flank steak generously with salt and pepper. Heat a skillet over medium-high heat and add 1 tbsp of butter. Once melted and hot, add minced garlic and cook briefly until fragrant.
  2. Sear the Steak: Place the steak in the hot skillet and sear for 4-5 minutes on each side until browned on the outside and cooked to your preferred doneness. Remove from heat and let it rest for 5 minutes to retain juices.
  3. Cook the Orzo: In a separate pot, bring 2 cups of water or chicken broth to a boil. Add orzo and cook according to package instructions, usually about 8-10 minutes, until tender. Drain any excess liquid.
  4. Make the Creamy Sauce: Return the cooked orzo to the pot over low heat. Stir in 1/2 cup heavy cream, 1 tbsp butter, and 1/2 cup grated Parmesan cheese. Mix well until creamy and heated through. Season with salt and pepper to taste.
  5. Slice the Steak: Thinly slice the rested flank steak against the grain to ensure tenderness.
  6. Serve: Plate the creamy orzo and top with sliced flank steak. Optionally garnish with additional Parmesan or fresh herbs.

Notes

  • Letting the steak rest after searing helps keep it juicy.
  • Using chicken broth instead of water adds more flavor to the orzo.
  • You can add a pinch of crushed red pepper in the orzo for a bit of heat.
  • If preferred, replace heavy cream with half-and-half for a lighter dish.
  • Be sure to slice the steak against the grain for maximum tenderness.
