Instructions

  1. Prepare the beef: Season the beef chuck roast generously with salt and pepper on all sides to enhance flavor.
  2. Sear the beef (optional): In a large skillet, heat olive oil or butter over medium-high heat. Sear the beef chuck roast on all sides until browned, about 3-4 minutes per side. This step adds depth but is optional.
  3. Prepare vegetables: Slice the mushrooms and dice the onion.
  4. Set up slow cooker: Place the seared (or raw) beef chuck roast into the slow cooker. Add the sliced mushrooms and diced onion evenly over and around the beef.
