Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts (about 1.5 pounds)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon olive oil

Sauce

  • 2 tablespoons Dijon mustard
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tablespoon butter
  • 1 small shallot, finely minced

Instructions

  1. Prepare the chicken: Season the chicken breasts with salt and black pepper on both sides. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes per side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Make the creamy Dijon rosemary sauce: In the same skillet, reduce heat to medium and add the butter. Once melted, add the minced shallot and sauté for 2 minutes until translucent. Stir in the Dijon mustard and chopped fresh rosemary, cooking for 1 minute to release their flavors.
  3. Simmer the sauce: Pour in the chicken broth and heavy cream, stirring to combine. Bring the mixture to a gentle simmer and cook for 3-5 minutes until the sauce thickens slightly.
  4. Combine chicken and sauce: Return the cooked chicken breasts to the skillet, coating them with the creamy sauce. Simmer together for another 2-3 minutes to meld the flavors and heat through.
  5. Serve: Plate the chicken breasts and spoon the creamy Dijon rosemary sauce over the top. Garnish with additional rosemary if desired and serve warm with your favorite side dishes.

Notes

  • Use fresh rosemary for the best flavor; dried rosemary can also be used but use about 1 teaspoon instead of 1 tablespoon.
  • Chicken thighs can be substituted for chicken breasts for a juicier option.
  • For a lighter version, substitute half-and-half or milk for heavy cream, but the sauce will be less rich and thick.
  • This recipe pairs well with mashed potatoes, steamed vegetables, or a crisp green salad.
  • Make sure not to overcook the chicken to keep it tender and juicy.
