Chicken
- 2 boneless, skinless chicken breasts
Sauce
- 4 cloves garlic, minced
- 4 tablespoons unsalted butter
- Juice of 1 lemon
Pasta
- 8 ounces pasta (such as linguine or spaghetti)
- Prepare the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
- Cook the Chicken: Season the chicken breasts with salt and pepper. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken and cook for about 5-6 minutes per side, or until fully cooked and golden brown. Remove from the skillet and keep warm.
- Sauté Garlic: In the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Cook for about 1-2 minutes until fragrant but not browned.
- Make Lemon Sauce: Add the juice of one lemon to the skillet with the garlic butter. Stir and let it simmer for 1-2 minutes to blend flavors.
- Combine and Serve: Return the cooked chicken to the skillet and coat with the lemon garlic sauce. Serve the chicken over the prepared pasta, spooning extra sauce on top.
Notes
- Use fresh lemon juice for the best flavor.
- Chicken breasts can be pounded to an even thickness for quicker cooking.
- Add chopped parsley or grated Parmesan cheese as garnish if desired.
- For a lower calorie version, use olive oil instead of butter.
