Salad Ingredients
- 1 cup black beans, cooked or canned, drained and rinsed
- 1 cup corn kernels, fresh or frozen
- 1 cup diced tomatoes, seeds removed
- 2 tablespoons fresh lime juice (about 1 lime)
- 1 tablespoon olive oil
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 small jalapeño, seeded and minced (optional)
- Salt and pepper to taste
- Prepare the Ingredients: Rinse and drain the black beans if using canned. Dice the tomatoes and chop the red onion, cilantro, and jalapeño if using.
- Combine the Salad: In a large bowl, mix the black beans, corn, diced tomatoes, chopped red onion, cilantro, and jalapeño together evenly.
- Dress the Salad: Add the fresh lime juice and olive oil to the bowl. Season with salt and pepper to taste, then toss everything gently to combine and coat the ingredients with the dressing.
- Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld and the salad to chill before serving.
- Serve: Serve the Cowboy Caviar chilled as a dip with tortilla chips, or as a side dish with grilled meats or tacos.
Notes
- For added texture and flavor, consider adding diced avocado just before serving.
- This dish can be made a day ahead; chilling overnight enhances the flavors.
- Customize the spice level by adjusting the amount of jalapeño or omitting it altogether.
- Black-eyed peas or kidney beans can be substituted for black beans for a different twist.
