Ingredients
- 12 oz. box Rice Krispies cereal
- 2 (10 oz.) bags mini marshmallows, divided
- 1 stick unsalted butter (about 8 tablespoons)
- 1 tablespoon vanilla extract
- Food coloring drops (as desired)
- Melt Butter: Heat one stick of unsalted butter in a large non-stick saucepan over medium-low heat until fully melted, taking care not to burn it.
- Add Marshmallows and Vanilla: Stir in one and a half bags of mini marshmallows along with 1 tablespoon of vanilla extract. Continue stirring constantly over low heat until the marshmallows are completely melted and the mixture is smooth.
- Color the Mixture: Add food coloring drops a few at a time to the melted marshmallow mixture until you achieve your desired vibrant color. Stir well to evenly distribute the color.
- Combine Dry Ingredients: In a large bowl, pour the entire 12 oz. box of Rice Krispies cereal and the remaining half bag (5 oz.) of mini marshmallows. Toss them gently together to combine.
- Mix Colored Marshmallow with Cereal: Pour the colored marshmallow and butter mixture over the Rice Krispies and gently fold with a spatula or spoon until all cereal pieces are evenly coated with the colored marshmallow mixture.
- Shape the Treats: Press the mixture firmly into a large sheet pan lined with parchment paper or mold the mixture into fun shapes using hands or molds. Ensure the mixture is compact to hold its shape.
- Cool and Set: Allow the Rice Krispie treats to cool completely at room temperature so they firm up before cutting and serving.
