Instructions

  1. Bloom Gelatin: Sprinkle the powdered gelatin over 2 tablespoons of cold water and let it sit for 5 minutes to bloom completely.
  2. Heat Coffee Mixture: In a small saucepan, heat the brewed coffee with the sugar over medium heat until the sugar dissolves and the mixture is hot but not boiling. Remove from heat.
  3. Dissolve Gelatin: Add the bloomed gelatin to the hot coffee mixture and stir until the gelatin is fully dissolved. Allow the mixture to cool to room temperature but not set.
  4. Whip Cream: In a chilled bowl, whip the heavy cream until soft peaks form. Be careful not to overbeat.
  5. Combine Mixtures: Gently fold the cooled coffee-gelatin mixture into the whipped cream using a spatula. Fold gently to retain the airy texture.
  6. Chill to Set: Spoon the mixture into serving dishes and refrigerate for at least 4 hours or until the mousse is firm and set.
