Instructions

  1. Prepare the batter: In a mixing bowl, whisk together the eggs until frothy. Gradually add the milk and salt, then sift in the flour, stirring until the batter is smooth and no lumps remain. Let the batter rest for about 10-15 minutes to improve texture.
  2. Preheat the oven and pan: Preheat your oven to 450°F (230°C). Place a popover pan or muffin tin in the oven while it heats to ensure it is very hot before adding the batter, which helps the popovers puff.
  3. Bake the popovers: Carefully remove the hot pan from the oven. Quickly pour the batter into the greased cups, filling them about two-thirds full. Return the pan to the oven and bake for 15 minutes at 450°F (230°C) to create steam for rising. Then reduce the temperature to 350°F (175°C) and bake for an additional 20 minutes until the popovers are golden brown and puffed up.
  4. Cool and serve: Remove the popovers from the oven and immediately pierce each one with a sharp knife to release steam; this prevents them from becoming soggy. Serve warm with butter, jam, or your preferred accompaniments.
