Cinnamon Swirl

  • 1/2 cup brown sugar, packed
  • 1 tablespoon ground cinnamon

Instructions

  1. Prepare the muffin batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon. In a separate bowl, combine the milk, melted butter, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined, being careful not to overmix.
  2. Make the cinnamon swirl: In a small bowl, mix the softened butter, brown sugar, and cinnamon until well blended and spreadable.
  3. Fill the muffins with cinnamon swirl: Line a muffin tin with paper liners or grease well. Spoon about two-thirds of the muffin batter evenly into the muffin cups. Add a teaspoon of the cinnamon swirl on top of the batter in each muffin cup. Then, top each with the remaining muffin batter, covering the cinnamon swirl almost completely. Use a knife or skewer to gently swirl the cinnamon mixture through the batter for a marbled effect.
  4. Bake the muffins: Preheat your oven to 375°F (190°C). Place the muffin tin in the oven and bake for 18 to 22 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.
  5. Cool and serve: Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring to a wire rack to cool completely. Enjoy warm or at room temperature.
