Ingredients

  • 1 bunch of radishes (about 1215 radishes)
  • 3 tablespoons unsalted butter
  • 1 teaspoon chili flakes
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting the radishes.
  2. Prepare the radishes: Wash the radishes thoroughly and dry them. Using your hand or a flat-bottomed glass, gently smash each radish to flatten slightly but keep it whole.
  3. Roast the radishes: Place the smashed radishes on a baking sheet lined with parchment paper. Drizzle with a bit of olive oil and season lightly with salt and pepper. Roast in the preheated oven for 20-25 minutes, or until the radishes are tender and starting to brown.
  4. Make the chili butter: While the radishes roast, melt the butter in a small saucepan over low heat. Add chili flakes to the melted butter and stir well to infuse the flavor. Remove from heat once the butter is melted and fragrant.
  5. Drizzle and serve: Remove the roasted radishes from the oven and immediately drizzle with the warm chili butter. Toss gently to coat evenly. Serve warm as a side dish or appetizer.

Notes

  • For a milder spice, reduce the chili flakes to ½ teaspoon or omit entirely.
  • Fresh herbs like parsley or chives can be added for extra flavor and color.
  • Use radishes with similar sizes for even cooking.
  • This dish pairs wonderfully with grilled meats or roasted vegetables.
