Ingredients
- 1 bunch of radishes (about 12–15 radishes)
- 3 tablespoons unsalted butter
- 1 teaspoon chili flakes
- Salt, to taste
- Freshly ground black pepper, to taste
- Preheat the oven: Set your oven to 400°F (200°C) to prepare for roasting the radishes.
- Prepare the radishes: Wash the radishes thoroughly and dry them. Using your hand or a flat-bottomed glass, gently smash each radish to flatten slightly but keep it whole.
- Roast the radishes: Place the smashed radishes on a baking sheet lined with parchment paper. Drizzle with a bit of olive oil and season lightly with salt and pepper. Roast in the preheated oven for 20-25 minutes, or until the radishes are tender and starting to brown.
- Make the chili butter: While the radishes roast, melt the butter in a small saucepan over low heat. Add chili flakes to the melted butter and stir well to infuse the flavor. Remove from heat once the butter is melted and fragrant.
- Drizzle and serve: Remove the roasted radishes from the oven and immediately drizzle with the warm chili butter. Toss gently to coat evenly. Serve warm as a side dish or appetizer.
Notes
- For a milder spice, reduce the chili flakes to ½ teaspoon or omit entirely.
- Fresh herbs like parsley or chives can be added for extra flavor and color.
- Use radishes with similar sizes for even cooking.
- This dish pairs wonderfully with grilled meats or roasted vegetables.
