Filling
- 1 lb ground beef
- 1 cup shredded cheddar cheese
- 1/2 cup finely chopped onion
- Salt and pepper to taste
Wrapper
- 8 egg roll wrappers
- Oil for frying (about 2 cups, vegetable or canola oil recommended)
- Cook the Beef and Onions: In a skillet over medium heat, cook 1 lb ground beef with 1/2 cup finely chopped onion. Break up the meat as it cooks until it is browned and the onions are soft, about 7-10 minutes. Drain any excess fat and season with salt and pepper to taste. Allow the mixture to cool slightly.
- Prepare the Egg Rolls: Lay one egg roll wrapper on a clean surface with one corner pointed towards you. Spoon about 2-3 tablespoons of the cooked beef and onion mixture onto the center of the wrapper, then top with about 2 tablespoons of shredded cheddar cheese.
- Roll and Seal: Fold the bottom corner over the filling, fold in the left and right corners toward the center, and then roll tightly toward the top corner. Seal the edge with a bit of water to help it stay closed.
