This creamy, hearty Cajun Corn Chowder combines sweet corn, tender potatoes, and aromatic onions with a spicy Cajun seasoning, creating a flavorful and comforting soup perfect for cooler days or anytime you crave a warming bowl of chowder.

Ingredients

Scale

Vegetables

  • 3 cups fresh or frozen corn kernels
  • 2 medium potatoes, peeled and diced
  • 1 medium onion, finely chopped

Dairy & Seasoning

  • 1 cup heavy cream
  • 2 tablespoons Cajun seasoning
  • 2 cups vegetable or chicken broth
  • 1 tablespoon olive oil or butter
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the vegetables: Peel and dice the potatoes into small cubes, finely chop the onion, and measure out the corn kernels. This ensures all ingredients cook evenly.
  2. Sauté the onion: In a large pot or Dutch oven, heat the olive oil or butter over medium heat. Add the chopped onion and cook until translucent and fragrant, about 5 minutes, stirring occasionally to prevent burning.
  3. Add potatoes and corn: Stir in the diced potatoes and corn kernels with the onions, mixing well for 2 minutes to combine flavors and slightly cook the vegetables before adding broth.
  4. Simmer the chowder: Pour in the vegetable or chicken broth, then bring the mixture to a boil. Reduce heat to low, cover the pot, and let it simmer gently for 15-20 minutes or until the potatoes become tender when pierced with a fork.
  5. Season the chowder: Stir in the Cajun seasoning along with salt and black pepper to taste, ensuring the spices are evenly distributed throughout the soup.
  6. Add cream and thicken: Slowly pour in the heavy cream while stirring constantly. Continue to simmer on low heat for an additional 5-7 minutes until the chowder thickens slightly, stirring occasionally to prevent sticking or boiling over.
  7. Adjust seasoning and serve: Taste the chowder and adjust salt, pepper, or Cajun seasoning as desired. Serve hot, optionally garnished with chopped green onions or parsley for added freshness.

Notes

  • For a thicker chowder, mash some of the potatoes against the side of the pot and stir to naturally thicken the soup.
  • Use homemade or low-sodium broth to control the salt content.
  • For added depth, you can include diced bell peppers or celery during the sauté step.
  • To make this recipe dairy-free, substitute heavy cream with coconut cream or a plant-based cream alternative.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
