Ingredients

Scale

Cookie Base

  • 1 box brownie mix (about 18 ounces)
  • Eggs and oil as required by the brownie mix package

Toppings

  • 1 cup creamy peanut butter, slightly softened
  • 1 cup semi-sweet chocolate chips or chopped chocolate
  • 1 tablespoon unsalted butter (optional, for chocolate topping)

Instructions

  1. Prepare Brownie Cookie Dough: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the brownie mix with the required eggs and oil according to the package instructions until a thick dough forms suitable for cookie shaping.
  2. Shape and Bake: Drop tablespoon-sized scoops of the brownie dough onto a parchment-lined baking sheet, spacing them about two inches apart. Bake in the preheated oven for 10-12 minutes or until the edges start to set but the center remains slightly soft.
  3. Cool Cookies: Remove the baking sheet from the oven and allow the cookies to cool completely on the sheet to set their shape before adding the toppings.
  4. Prepare Peanut Butter Topping: Once the cookies are cooled, spread about a teaspoon of creamy peanut butter on top of each cookie in small circular mounds, resembling buckeye centers.
  5. Melt Chocolate Topping: In a microwave-safe bowl, melt the chocolate chips together with the butter in 20-second intervals, stirring after each, until smooth and glossy.
  6. Top with Chocolate: Using a spoon, drizzle or carefully spoon the melted chocolate over the peanut butter on each cookie, allowing some peanut butter to show as an edge to mimic classic buckeye candy.
  7. Set the Toppings: Place the cookies in the refrigerator for about 15-20 minutes or until the chocolate hardens, then serve or store in an airtight container.

Notes

  • Use a good-quality brownie mix for best flavor and texture.
  • For a more intense chocolate flavor, consider adding 1/4 cup cocoa powder to the brownie mix.
  • If peanut butter is too stiff, warm it slightly to make spreading easier.
  • Store cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • For nut-free variation, substitute peanut butter with sunflower seed butter and ensure toppings are allergy-friendly.
